Bread Stuffing


  • 1 stick (1/2 cup) butter

  • 2 cups onion, diced

  • 2 cups celery, diced

  • 1 tablespoon minced sage

  • 1 tablespoon thyme

  • salt and pepper 

  • 3 cups turkey or chicken broth

  • 2 eggs

  • 1/4 cup chopped parsley

  • 16 cups stale white bread, cubed

  • Scallion Olive Oil (to drizzle)


  1. Melt butter in a large skillet over medium heat. Add diced onions and celery, minced sage, thyme, salt and pepper and cook 5 minutes. Add turkey or chicken broth and bring to a simmer. Beat eggs with chopped parsley in a large bowl; add bread, then pour in the vegetable-broth mixture and toss. Transfer to a buttered baking dish and drizzle with Scallion Olive Oil. Cover and bake 30 minutes at 375 degrees F; uncover and bake until golden, 30 more minutes.  (Or stuff in your turkey and bake.)
