Fresh Basil Pesto Sauce



2 cups packed fresh basil leaves
2 cloves garlic
1/4 cup pine nuts
2/3 cup Arbequina/Koroneiki EVOO
salt and pepper to taste
1/2 cup fresh shredded Parmesan
pasta of your choice


1. Combine basil, garlic, and pine nuts in a food processor and coarsely chop. 
2. Add Arbequina/Koroneiki EVOO and process until fully smooth.
3. Add salt and pepper to taste.
4. Toss with cooked pasta and return to pot. Cook on low to warm.
5. Top with Parmesan and serve.
