Honey Roasted Sweet Potatoes
2 pounds sweet potatoes or yams
2 tablespoons The California Olive Arbequina/Koroneiki Olive Oil
1 teaspoon fresh lemon juice
2 tablespoons honey
2 tablespoons brown sugar
Preheat oven to 350 degrees F.
Peel and cut the sweet potatoes or yams into 1-inch pieces and place in a 9 X 13 baking dish. In a small bowl whisk together Arbequina/Koroneiki Olive Oil, honey and lemon juice. Drizzle mixture over potatoes and toss to coat. Sprinkle with the brown sugar, and bake, stirring occasionally, for about 1 hour, until potatoes are tender. Makes 6 servings.
