Whisk together Meyer Lemon Olive Oil and Honey in a sauce pan over low heat until
smooth. Remove from heat and cool. Beat together goat cheese and olive oil/honey mixture with an electric mixer until creamy. Refrigerate for 2 hours. Serve on a bagel or french bread or dip with vanilla wafers as a sweet treat!
