Mojito Marinated Shrimp



20 Chopped Fresh Mint Leaves
1/3 cup Sugar
1/4 cup Finely Chopped Sweet Onion
1/3 cup Light Rum
3 tbl. Fresh Lime Juice
1 tbl. Pacifica Culinaria Key Lime Avocado Oil
1 teas. Freshly Grated Lime Zest
1 teas. Coarse Kosher Salt



Mix all ingredients together and marinade shrimp in refregerator for 2-3 hours. Either skewer shrimp and grill on the BBQ or saute in 1 tbl. Pacifica Culinaria Key Lime Avocado Oil. Reserve a small amount of marinade for a finishing sauce. Enjoy!
