White Bean and Edamame Salad with White Balsamic

 

INGREDIENTS

  • • 1/3 c.  Scallion Olive Oil
    • 2 c. shelled edamame
    • 1 can cannellini beans (or any white bean), rinsed and patted dry
    • 6 cherry tomatoes, cut into quarters
    • 1/3 c. finely chopped celery
    • 1/4 c. chopped shallots
    • 3 tbl. White Balsamic
    • 1 tea. lemon zest
    • 2 tbl. lemon juice
    • 2 tbl. chopped parsley
    • 1 clove garlic, minced

DIRECTIONS

Simply toss all ingredients and serve chilled!
