Lemony Zucchini Chips
1 large Zucchini
2 tbsp. Meyer Lemon Olive Oil
Preheat oven to 225 degrees. Use parchment paper or silicon baking mats to line 2 large baking sheets.
Slice zucchini on a mandolin to create thin slices. Place the slices on a sheet of paper towels to absorb any extra liquid. Place the slices onto baking sheet next to each other forming lines. Do not overlap!
Pour olive oil into a small bowl. Using a pastry brush, brush the oil onto each zucchini slice. Sprinkle with salt. Do not over season. Bake for 2+ hours until they start to brown and are crisp. Let cool before enjoying!
